Just finished making a simple, but delicious snack! Kale chips are super easy to make, and guilt free to eat 😊
Preheat oven to 325 degrees F. Using your fingers, rio your kale off of the stem in bite size pieces. Rinse throughly, and gently pat to dry. Line a medium size baking tray with foil, and evenly distribute the kale. Sprinkle with salt, pepper and olive oil. Bake for 20 minutes, and be sure to toss the chips around half way thorough!
One of my favourite places for lunch if I’m out shopping or in the city is @sumosalad . It’s a much healthier option compared to most of the other places in the food court, and it tastes great. I like how they have some standard staples, and some that are different each time I go. This time I chose the vegan superfoods and seeds (on the left) and the vegetarian beetroot and pumpkin (on the right). I’ve had the beetroot and pumpkin before, but I’d never seen the superfoods salad. I decided to try it, even tough it had kale, which I’ve also never tried, and I really enjoyed it. I’m hoping I’ll get another chance to have it!

So easy. So fast. So nutritious. I usually buy the pre spiraled beets. But I thought I would save some money and do the work myself. $2.39 for a bundle of 3 large beets. Shredded and sliced. Perfect for snacking and adding to salad. .

The last five years have not been filled with seeing as much of my friends as I would like. So part of my new year plans was to invite friends over on a Sunday. Today’s lunch was Italian inspired thanks to the wine tasting @sillettivof yesterday afternoon. It was a bit of a challenge as with thanks to @antonsilletti I did not get home till 3am. I was in the kitchen at 8am listening to @bbcradio2. The menu was Rutabaga swede & carrot potage. Roasted pumpkin. Roasted mushrooms. Crepes filled with aubergine goats cheese & thyme with Fontina sauce. Chargrilled courgettes stuffed with petit pois purée. Ravioli with Asparagus creme. Carpaccio of Roasted beetroot with dried ricotta and sherry vinegar. Freshly baked bread with @deneelder goats butter. I used leftover risotto to make little Rissotto cakes with creme fraiche and San Daniele ham. This was really for the one person who was not vegetarian. He said that he was surprised to say that he enjoyed everything despite it being vegetarian. Desert was chocolate, macadamia cashew almond torte with creme fraiche. Not that I ate badly in the first place, but I’m actually enjoying this whole conscious healthy eating lark.
I’ve always had a problem with food, and used to go days without even thinking about eating. Even as a child I saw it as an inconvenience, a waste of time that could be better spent elsewhere. So I’m finding it strange that recently I’ve actually looked forward to, and enjoyed, my meals.
At least one part of my life is healthy.
