Vegan Lentil Pot Pie is cozy winter comfort food at its finest. 😍 These single serving hand pies have enough pizzazz to hold their own at any holiday table or potluck, but I bet would work just as well as a rustic full size pie.
This was my first try making vegan pie crust & it turned out beautifully! I started with a basic crust recipe from a Sur La Table class & #veganized it. ▫️1 1/2 tsp sugar
▫️1/2 tsp salt
▫️4 oz vegan butter (Smart Balance EVOO)
▫️3-4 TB water ▫️1/2 c lentils
▫️1 TB olive oil
▫️3 cloves minced garlic
▫️10 oz yellow potatoes, peeled & diced
▫️1/2 sm yellow onion, diced
▫️1 1/2 oz shredded carrot
▫️3 TB dry white wine
▫️1 c veg broth (@betterthanbouillon No Chicken Base)
▫️1/2 c unsweetened cashew milk
▫️1/2 can (~7oz) great northern beans, rinsed & drained
▫️1/2 TB corn starch
▫️1 TB thyme
▫️1/2 tsp rosemary
▫️1/2 tsp paprika
Freeze water 10-15 min until thin layer of ice starts forming.
Add flour, sugar, salt & butter (coarsely chopped) to food processor. Pulse until just mixed (you'll see the flour start to turn yellow throughout). Add ice water 1 TB at a time until lg clumps form & dough starts to hold together. Form a ball on a lightly floured surface - don't overwork. Flatten, wrap in plastic & refrigerate 30 min.
Preheat oven to 375°F.
Bring lentils & 1.5 c water to boil in covered pot with vented lid. Simmer 15-20 min. Drain & set aside.
Heat oil in lg pot over med heat. Add garlic, onion, potatoes & carrots. Cook 3-4 min, until onions translucent. Deglaze with wine & reduce. Add broth, milk & beans. Bring to boil. Measure 1TB of hot broth into bowl, mix with corn starch to make a roux, return to pot. Cook 10-15 min until potatoes are fork tender. Add cooked lentils, thyme, rosemary & paprika. Season with salt & pepper. Remove from heat.
Roll dough to 1/8" & cut 12 circles using 4" cookie cutter or rim of lg glass. Lightly spray muffin tin & press dough circles into pan. Fill cups with soup. Top with remaining dough & brush with cashew milk.
Bake 20-25 min to brown crust.
