The perks of having a 5 month old - your day starts at 5/6am so by 7ish I’m 2 coffees down, I’ve made a stack of banana oat pancakes and am meal planning for the week ahead whilst getting some inspo for where I want to be!! I’ve done it once I can do it again! I’ve loved having 2 weeks off SW and now feel so motivated to get back on plan and crack on with getting to goal. Onwards and downwards! Today, my day started off with a wonderful brunch at Cafe Borrone with my mom and brother. This spot is, along with Tootsie’s, one of the best bustling breakfast and lunch spots in the South Bay, and it’s located in Menlo Park. Not only is their food amazing, but the service and ambience is also fantastic. Today, we ordered orange juice, French toast, banana pancakes, and their number 3 scramble. The orange juice here is possibly the best I’ve ever had. It is fresh with a true orange flavor. Moving on to the food, as soon as the waitress walked up with the dishes, my nose was filled with a delightful aroma. I could not wait to dig in, but of course, I had to take pictures for you guys! Anyway, I rarely eat French toast, but I think that this place has changed me. The French toast here is sweet, moist, and springy, with a perfect tartness from the strawberries. I would 100% recommend it. Bite after bite, this dish never ceased to amaze me, but the banana pancakes were a different story. Although they were piping hot, fresh, moist, and sweet, after a few bites, it became too heavy. It’s perfect for if you are really hungry, but definitely share with someone if you are not. Lastly, their number 3 scramble with mushrooms, sherry, shallot, chives, and crème fraiche was simply fantastic. It was creamy, silky, and the mushrooms added a perfect earthy tone to the dish. Overall, the food here brings classic breakfast dishes to the next level, and even though there’s a line and it’s quite busy most of the time, their service is actually very quick and it is definitely worth it, so come if you haven’t already!

Bananas turning too quick before they get eaten? Peel, cut up (I do halves as that's how I use them) & freeze. Then you can just grab them out when you need for things like baking or making some 'NICE' CREAM 🤤. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
If your looking to reduce your waste, keep the peels for compost or feed a friends chooks. Mine go straight into the 'Chook Bucket' for my sisters chickens! 🤙🏻

¡Algunos panqueques de canela esponjosos con plátanos! •

Esta receta hace alrededor de 10-15 panqueques y sirve 2-3 personas. Siéntete libre de doblar o dividir a la mitad la receta 👍🏼 Fui muy exacto acerca de las medidas, pero algunas cosas como el tamaño de tus plátanos y cómo recoges / tamiza la harina pueden afectar las proporciones. Ajuste la mezcla con más líquido o harina dependiendo de qué tan espesa / líquida sea.
CINNAMON BANANA PANCAKES
-5 huevos de lino (5 cucharadas de semillas de lino molidas + 10 cucharadas de agua)
-1 taza de harina de trigo integral
-3/4 taza de harina de almendra
-3/4 taza de harina de garbanzo
-3 cucharadas de harina de coco
-4 cucharaditas de polvo de hornear
-4 cucharaditas de canela -1/2 cucharadita de nuez moscada
-pizca de sal
-2 tazas de leche de almendras
-2 plátanos manchados maduros, puré
-2 cucharaditas de extracto de vainilla
-2 cucharadas de jarabe de arce para dulzura
Mezcle el huevo de lino en un tazón pequeño o en un vaso; apartar para espesar.
Agregue las harinas, el polvo de hornear, la canela, la nuez moscada y la sal en un tazón grande.
En un recipiente aparte, machaque los plátanos y agregue el extracto de vainilla, el jarabe de arce, el huevo de lino y la leche de almendras.
Agregue húmedo a seco y mezcle hasta que no haya manchas visibles de harina seca. ¡No mezcle demasiado!
Rocíe la sartén con aceite de coco o mantequilla vegana (mi favorito es @earthbalance) a fuego medio.
Coloque la mezcla en el tamaño deseado de panqueque. Cocine por 3 minutos en cada lado, ¡o hasta que estén dorados!
¡Completa tus complementos favoritos! Usé almendras en rodajas, más plátanos, mantequilla de almendras y jarabe de arce puro. ¡Disfrutar! 😋

Savoring these last hours of the weekend and feeling grateful for flexibility 🤸🏼♀️ ~ and I don’t just mean the toe-touching kind ~ @bethanycmeyers and @nicotortorella had a beautiful wedding announcement this week and in it they said “it’s really hard to break something that bends” It’s a beautiful part of their story but also such a good reminder for us all to be a little softer and more flexible.
Flexibility allows you to accept that some things aren’t in your control, that going to a restaurant where you haven’t vetted all the options ahead of time can be fun, that eating food or moving your body in a way you like has nothing to do with what anyone else chooses is right for them and doesn’t mean anything about your value as a human. AND sometimes flexibility allows you to make some bomb banana pancakes just because you want to make bomb banana pancakes 🍌

Brunch for Beginners: Banana Pancakes
1 Cup Oats (add more as needed)
1/4 Cup Plain Greek Yogurt
1 Tbsp Almond Milk (I use vanilla)
1/2 tsp Vanilla Extract
1/2 tsp Baking Powder (optional)
Add a pinch of cinnamon, blend & place on skillet 🥞
