Veggie Pho. The weather has started to turn a little in Sydney this week from boiling hot to welcome to Autumn rainy weather. Days like today when I feel tired and cold a warming soup is essential. This is a super easy soup to make. Heat chicken stock pop in onion garlic ginger chilli cloves carrot and boil once the carrot has softened add the rest of the vegetables some lime juice. While that comes back up to boil, par boil the noodle for 1 minute immediately drain and rinse in cold water. Once the soup mixture has come back to boil and after 4-5 minutes, I get a deep bowl put noodle in the bottom add soup mixture on top splash of fresh bean sprouts Thai basil and more freshly squeezed lime juice to finish. 지난주에 Farmer’s Outlet에서 smoked cod roe를 반값에 팔길래 사서 끓여봤는데, 소금에 절여서 훈제한건지 너~~~무 짜다ㅠㅠ 알탕의 알만 빼고 흡입ㅋㅋㅋ 부재료로 들어간 해산물은 #낙지#바지락#새우 🦐🐙🐚
Korean roe soup made using the #smokedcodroe i got at the farmer’s outlet last week! Little did i know how god damn salty smoked roe was... ended up just eating all the other ingredients *except* the roe (aka shrimp, octopus, clams). Better luck next time 🤞🏼

This is our growing up comfort food. You only need a few ingredients and possibly something you always stock up in your pantry.
To me, this dish is perfect for midweek night when I am tired and sick of takeouts.
It’s quick to cook too. This plus rice plus fried chicken or fish all ready within 30mins. If want even quicker, get the roasted chicken from NTUC or ColdStorage.
