Loooove it! 💓 Super fluffy vegan and gluten-free pancakes which taste like semlas (cream bun) w/ pink vegan whipped cream and raspberries. So here I combine two things to celebrate: #laskiainen (for Finns it means a day of sleigh-riding and eating semlas) and #pancakeday (I heard it is today, right!?). Pancake batter (thick): 4dl glutenfree oats, 3dl almond flour, 1dl potato flour, 1dl psyllium, 1,5 tsp baking powder, 2 very ripe bananas, 1-2 tsp sea salt flakes, 2tsp cardamom, 1/2tsp bourbon vanilla powder, 1tsp ceylon cinnamon, 1/2 tsp ground ginger, 1/2dl melted coconut oil, 1/2dl maple syrup, ~ 6dl oatmilk (or other plantbased milk) + 2dl sparkling water (with lemon). Add more milk if needed, but the batter should be super thick. The pink color for the whipped ”cream” comes from beetrootjuice powder.

HERB RISOTTO WITH LENTIL BURGER

Whenever we make a risotto, we like to have a source of proteins on the side that is easy to cook, like this lentil burger from Garden Gourmet/Hälsans kök for example.

This post is in collaboration with Hälsans kök.

Ingredients (4 servings):
-0,5 dl chopped frozen basil
-0,5 dl chopped frozen parsley
-0,5 dl chopped frozen dill
-4 dl of risotto rice (I used Arborio)
-2 dl of white wine
-25 g plant-based butter
-1 onion
-200 g mushrooms
-2 cloves of garlic
-1 L vegetable stock
-2 tbsp olive oil
-1 dl of sunflower seed parmesan (optional)
-4 Lentil burgers

Ingredients for sunflower seed parmesan:
-2 dl dry roasted and salted sunflower seeds
-1 dl nutritional yeast
Add all the ingredients in a food blender.

____________________________________________
1. Finely chop the onion and the garlic.
2. Heat some olive oil in a medium heated pan and add the onions and garlic until it softens.
3. Tip the rice into the pan and cook for 5 min. Pour over the wine and let it bubble to nothing so the alcohol evaporates.
4. Keep the pan over a medium heat and pour in a quarter of the stock. 
5. Simmer the rice, stirring often, until the rice has absorbed all the liquid. Add about the same amount of stock again and continue to simmer and stir - it should start to become creamy, plump and tender. By the time the final quarter of stock is added, the rice should be almost cooked.
6. Add the butter, frozen herbs and parmesan
7. Turn of the heat and let the risotto take up any excess liquid.

Serve with lentil burgers, tomato bruschetta and fried mushrooms.

So grateful for these eggs. Yesterday the chickens found a hole in the fence of the garden. They went out exploring and then realized they couldn't get back as easily. After an hour of chasing and coaxing chickens with treats (and the rooster Willie Dos), we got them all back inside, safe and sound. 
We had garden bed fences made to keep them from tearing up the new starts. Now we will need to have the exterior fence fortified. My goal is a beautiful white concrete  perimeter wall with gorgeous Bougainvillea growing on top. But we can probably do a corrugated zinc wall for much less cost and effort and create the privacy we desire. 
The 5 eggs we got today were very expensive. But it's more about the chickens eating the zompopos (giant destructive leaf cutter ants), than #fresheggsdaily #functionstacking for the win!

Fun fact, the first time my mother ever tried one of my chia puddings she said it looked like the frogspawn in the garden pond 😂😂 Maybe I can change her mind about this Coconut and Açai Chia blend!

To make:
3 tbsp chia seeds
1 cup coconut milk
Pinch of salt
1/2 packet frozen açai (preferably one with no added sugar)
Coconut water or regular H2O

Combine the chia seeds, salt and milk in a bowl and leave over night. The next morning, blend your frozen acai and coconut water until it has a nice smooth consistency. Next, simply layer you chia pudding with the açai blend and top with your favourite toppings! My personal favourites are nutty granolas 😋😋

when i was a kid and mom wasn't at home to cook for us, my siblings and i would take ground pork/beef from the fridge, stir-fry it (maaaybe with some vegetables if we were feelin it) and eat it over rice as a lazy meal. this meatless version is so much better for you and imo has much more flavor— the minced mushrooms plus the added 芽菜 (pickled mustard greens) = umami bomb. seriously good atop either rice or noodles. you can add in any veggie you like on the side; i used napa cabbage this time

*6 oz shiitake or baby bella mushrooms
*1 stalk celery, chopped
*3 tbsp pickled mustard greens/ya-cai or zha-cai, finely chopped (you can sub sauerkraut)
*2 tsp shaoxing cooking wine
*2 tsp fermented chili broad bean paste (or fermented black bean sauce)
*1 tbsp soy sauce or tamari
*1/2 tsp five spice powder 
finely chop up the mushrooms or pulse in a food processor. brown the mushrooms in a pan in some cooking oil or water, then add in pickled greens, celery, and other ingredients and stir-fry for another few minutes. splash in the shaoxing wine and stir to deglaze the pan. serve over noodles or rice.

Happy Pancake Sunday, Lovelies!!! This BerryLicious Pancake Stack was a critical component in this today’s “mood shifting.” This morning, I looked at life with a new set of eyes, meditated, prayed, read my Bible and then proceeded to make these yummy goodies. Can you believe how fluffy they are?! I added blueberries to some of the pancakes and some are plain. I topped them with fresh berries and a blackberry blueberry compote that is a simple cooked down combination of berries and agave nectar. So yum! I’m all energized and ready to work for the next five hours. Yep, it’s a working Sunday. But that’s all good, too. Grateful to be working.  Enjoy your day. Love and Light! ☮️🙏💕✨😍💙🌱🌈💜💘 💕

Have you tried making a creamy cashew drink yet? If not, you're missing out! All you need is a strong blender to turn cashews and a warm liquid (water or coffee) into a creamy drink. No soaking required! I like to add dates and cocoa powder to make hot chocolate - It doesn't get any healthier than that! Vegan goodness at the Juhu Organic Farmers' Market by @sharanindia this morning! 🌞
1. We had Adai idli (steamed dumplings made with mixed lentils and veggies) with tomato chutney. It was super soft, fluffy and delicious 😋 and I loved the spicy red chilli on top. I carried steel plates, spoons and a glass to the market in order to reduce as much waste as we could! The old couple at this stall was so pleased to see that we had our own plate! 😊🍽 🥄
2. Red rice idli, sambhar (lentil curry) and chutney by Organic Treats was super yummy and very filling. Initially, I thought it looked dry but it was soft and moist and not dry at all! And this chutney was delish... something I've never had before...tangy and refreshing. (Unfortunately, I didn't think of carrying bowls and we ended up needing their plate for the sambhar but at least it's not plastic.)
3. Mint chocolate chip and chocolate ice cream 🍧 from Vegan Heart - so so good 😍 and a perfect way to beat the heat. It was so hot today 😓...felt like summer is here already.
💕 A morning well spent but I ended up with a headache thanks to the heat 😩 so was happy to get home soon after. 🏡

Recipe:
2 flatbreads (shop bought)
2-3 garlic cloves
2 tbsp vegan butter
Handful parsley 
Vegan Parmesan (I use @violife_foods) - Crush the garlic cloves and chop the parsley and add to the vegan butter and mix. - Spread over the flatbreads and top with vegan parmesan (as much as you want 🧀). Place under the grill for 2 minutes until bubbling and melted.

Happy pancake Sunday!😄
Gluten free cacao & banana pancakes, topped with almond yogurt mixed with pink pitaya powder, cacao nibs, raspberries & blueberries! So good ❤.
Recipe:
1 ripe banana
2,3 dl (one cup) gluten free flour
1,5 tsp baking powder
1 tsp salt
2 tbsp raw cacao powder
2 tbsp coconut oil
2,3 dl (one cup) almond milk
•
Mash the banana in a bowl and add in the flour, baking powder, cacao & salt and mix together. Mix in the almond milk and coconut oil, let it set for about 5 min.
Spoon the batter into a pan, and cook until you see the edges starting to turn golden brown. Flip pancakes and continue to cook until done.💙

Here's my lunch from Thursday! Super easy vegan and naturally gluten free "tacos". The "taco" is actually salad, so I call this lunch vegan taco salad boats🌮 And yeah, my mom made sweet potato wedges in the oven and I also put them in my "taco" salad boat 😋 
RECIPE (very simple):
•Green salad leaves (used as tacos) •Any kind of vegetables--> I used pepper bells, onion and carrots (as many as you want) •Tofu •Fajita seasoning mix ~Put sliced tofu, chopped onion and chopped carrots in your pan and after a while add your bell peppers and fajita seasoning mix. Simple as that!

hattet ihr alle ein schoenes Wochenende? ☺️Ich hatte heute unheimlich gutes Sushi, wurde inspiriert „positivity“ Podcasts zu hoeren und habe mich ueberreden lassen, endlich im gym anzumelden. 💪🏻 Jetzt muss nurnoch die Wohnung fertig geputzt werden und dann geht’s auch schon schlafen. 😴 Aber nicht ohne Essen! Wie gern haette ich jetzt nochmal so eine leckere Buddha Bowl mit Wedges aus Kartoffeln & Suesskartoffeln, Couscous, Gemüse, Steckrüben „Hummus“ und den ALLERBESTEN VEGGIE BALLS. 
Leider bin ich dafuer zu ungeduldig, denn irgendwie bin ich heute non stop hungrig. Ob das am Wetter liegt?😅🤷🏻‍♀️ # immerdieseAusreden

Hattet ihr ein schönes Wochenende?? Ich hoff ihr seid nicht erfroren!❄️Weil das Wetter Frühlings-technisch zu wünschen übrig lässt, hab ich mir heut wenigstens den Frühling auf meinen Teller geholt!😍Es gab gebratene Gnocchi mit Spargel zum Abendessen!☺️ Sozusagen Resteverwertung und es musste jetzt nach dem Sport schnell gehen (Hunger groß, Kühlschrank-Inhalt sonntags leider nicht so groß!🤷🏻‍♀️😂) Dafür hab ich einfach nur alles, was ihr auf dem Teller seht (abgesehen von der Avocado) in Olivenöl mit Rosmarin angebraten, mit dem @justspices Italian Allrounder gewürzt (selbst gekauft, aber wahrscheinlich trotzdem Werbung weil Markennennung😉) und als Topping gabs noch Erbsen, bunte Cocktailtomaten und Frühlingszwiebel!☺️Mehr hab ich heut nicht mehr zu sagen und wünsch euch deswegen nur  noch einen schönen Abend ihr Lieben 😘 -🇬🇧Made roasted Gnocchi with tomatoes, asparagus and peas for dinner tonight! Ich hoff ihr seid nicht erfroren!❄️Weil das Wetter Frühlings-technisch zu wünschen übrig lässt, hab ich mir heut wenigstens den Frühling auf meinen Teller geholt!😍Es gab gebratene Gnocchi mit Spargel zum Abendessen!☺️ Sozusagen Resteverwertung und es musste jetzt nach dem Sport schnell gehen (Hunger groß, Kühlschrank-Inhalt sonntags leider nicht so groß!🤷🏻‍♀️😂) Dafür hab ich einfach nur alles, was ihr auf dem Teller seht (abgesehen von der Avocado) in Olivenöl mit Rosmarin angebraten, mit dem @justspices Italian Allrounder gewürzt (selbst gekauft, aber wahrscheinlich trotzdem Werbung weil Markennennung😉) und als Topping gabs noch Erbsen, bunte Cocktailtomaten und Frühlingszwiebel!☺️Mehr hab ich heut nicht mehr zu sagen und wünsch euch deswegen nur noch einen schönen Abend ihr Lieben 😘 -🇬🇧Made roasted Gnocchi with tomatoes, asparagus and peas for dinner tonight! It consists of 1 pear, 2 kiwi, 2 hands of raspberries, water, 1 banana, 1 teaspoon spirulina, 1 teaspoon cacao and soyo. I used a cookie cutter to form the little apple stars and plain soyo to create the #swirls on top.

Qué tal un poco de chocolate para terminar la semana? Yo estoy MUY de domingo, y me vendría fenomenal.
Esta receta os la debía desde hace tiempo. Lo que pasa con esto es que está demasiado bueno, y claro, es un peligro. Bueno, seamos honestas, el peligro soy yo, que veo chocolate y pierdo el norte.
Pero basta de confesiones, vamos a lo importante. Para hacer tu Bounty vegano necesitas sólo 4 ingredientes, y si eres un poco cocinillas probablemente ya están en tu cocina. Te animas?
🌱 Ingredientes: 140g coco seco rallado • 1 lata (400ml) de leche de coco • 4cs sirope de arce • 1 tableta de chocolate negro (70-85%) para fundir
👉🏻 Enfría tu lata de leche de coco en la nevera mínimo un par de horas (o toda la noche). Abre con cuidado, y ayudándote de una cuchara, separa la pulpa que queda en la parte superior. Descarta el líquido, y añade la pulpa a un bol.
En ese bol añade el coco y el sirope de arce, y mezcla bien con las manos. Debe quedarte una masa compactable con la que formar bolitas con cierta consistencia.
Forma tus bolitas o barritas, coloca en una bandeja y deja enfriar en la nevera durante 30min.
En ese tiempo, funde tu chocolate al baño María. Con la ayuda de un palillo de brochetas o de un tenedor, ve sumergiendo tus barritas de coco en chocolate bañándolas completamente, con cuidado de que no se rompan. Coloca sobre una rejilla para enfriarlas, con un papel encerado o bandejita debajo para recoger el chocolate que caiga y reaprovecharlo.
Puedes dejar tus barritas tal cual, o decorarlas con un poquito de coco rallado o unos nibs de cacao por encima antes de que se solidifique el chocolate.
Traslada a la nevera, y saca unos 20 minutos antes de servir.

Ich liebe Tartes- süß und salzig <3- bei uns gibt es regelmäßig das schnelle und einfache Essen aus dem Ofen. Abends nach der Arbeit bleibt meist nicht viel Zeit noch groß aufzukochen, dann wird schnell etwas Gemüse geschnippelt, der Ofen angeworfen und eine Tarte gezaubert. I spiced my oats today with cinnamon and ginger as I had to rush out the house today, but super glad I was still able to fit this bowl in before leaving. Pretty much a fun day with the fam and then a little work towards setting up a blog once and for all. Hoping your weekend has been just as enjoyable and relaxing as mine. Definitely needed the reboot. ☺️

Cinnamon Ginger Oats
1/2 cup rolled oats
1/2 mashed banana
1 tsp cinnamon
1 tbsp ground flaxseed
1/2 tsp ginger powder 
1 cup almond milk
1 tsp maple syrup/agave (optional)
Pinch of salt 🌱

In a sauce pan add dry ingredients and stir. Next, add in almond milk, banana, maple syrup if using and brewed tea. Place sauce pan on stove over medium heat and and allow to thicken for 5 minutes. Pull off stove and give a quick stir before serving it with desired toppings. 👌🏽

Bolachas de gengibre 😋. São um ótimo snack para qualquer altura e super fáceis de fazer. A receita é da @lucy_and_lentils, mas eu usei geleia de arroz em vez de maple syrup. Precisam de:
- 80 gr flocos aveia
- 3 c sopa óleo de coco derretido - 3 c sopa geleia arroz (ou outro adoçante)
- 1 c sopa gengibre em pó
- 1 c chá de canela
Pré-aquecer o forno a 180° graus. Misturar todos os ingredientes, sendo o óleo de coco derretido no final. Formar pequenas bolinhas e achatar em bolachas bem fininhas. Levar ao forno 10/15 minutos, até dourarem. Dica: deixem arrefecer bem para ficarem crocantes.

Ginger biscuits 😋. Super easy to do. Recipe from @lucy_and_lentils, but I used jelly rice instead of maple syrup. You need:
- 80 gr oats
- 3 tbsp coconut oil melted
- 3 tbsp maple syrup ( I used jelly rice)
- 1 tbsp ground ginger - 1 teaspoon cinnamon
Preheat oven at 180°. Add all the ingredients together and the melted coconut oil at the end. Mix. Make small cookies, press to make circles. Place in the oven for 10/15 minutes until edges get golden. Let it cool. Enjoy 😋.
