They're much larger than spring radishes and the skin has a "rock look". Once you open them up, you find the white, soft and crispy flesh. It has a tasty hot spicy bite to it. Plenty of vitamin C, minerals and it boosts a healthy digestive function. .
Try them raw on salads, sautee or braise for a side dish. Its elegant back&white colors make it a great option for dinner party appetizers and beautiful winter salads.

It might sound obvious but you'd be surprised at how many people don't know how carrots grow. Some think they bloom on trees, on bushes, some even think they are manufactured in a supermarket and then packed to be sold.

We decided to share some images of "how it grows" after all these carrot-related posts. Now, we can all know where carrots come from the next time we eat them.
Beneath the soil is the #root , what we usually eat of this #rootvegetable . The green tops are the "plant", the part that's above the #soil , and guess what? They're also edible. You can make a special carrot-top pesto for your roasted carrots, or simply add them to salads, soup, stir-fries, omelets 🥕✨ #knowyourfood#farmfeel
A light dinner that warms you up: #carrotsoup ! We continue to see lots of #carrots in the NYC's farmers markets this winter, so here's another delicious way to prepare them.
This yummy soup bowl was made and photographed by @vintagemixer (thank you!). Becky combines carrots, garlic, onions, a few spices and vegetable broth into the soup base. That's really all you need for a thick, creamy and comforting soup. 💡 You can play with the toppings to add more substance to the meal. Roasted rainbow #carrots ! One of the many dishes you can make with the #carrots from yesterday's post.
This beauty was prepared and photographed by @lemonsandbasil (thank you Kaylee!). 💡 Easy-to-make recipe: she coats the carrots with coconut oil, raw honey, balsamic vinegar, sea salt and pepper. On top, minced garlic and dried herbs (thyme and parsley). 30min in a pre-heated oven (450F) and done, yum! This and many more recipes can be found on her blog.
Did you know #carrots can come in different colors 🎨? These are yellow carrots. We usually see orange ones, however carrots can come in purple, red, yellow and even white varieties. The levels of carotenoids (organic pigments produced by plants) are responsible for the color differences. Have you ever seen colorful carrots around? 🥕= 💜❤️🧡💛💟 .
The taste is very similar among these varieties. Our above photographed carrots tasted good but not as sweet as we expected - celery and parsley notes very present. We shredded them raw into a fresh salad and the yellow color made it interesting.
Here's our favorite way to prepare carrots this season💡 buy a colorful brunch of carrots from the farmers and just roast them (stem on, of course!!) with oil, salt, pepper and warm spices (cumin, coriander, and even cinnamon). Simply delicious!

Steamed cabbage egg rolls! One of the many dishes you can make with the #cabbage from yesterday's post.
These delicious little things were prepared and photographed by @sheiladipity (thank you). Sheila's best💡tip for making cabbage rolls is "use a knife to "shave" the vein of each cabbage leaf until the vein is flush with the cabbage leaf (after boiling the leaves and letting them cool)." Doing this evens the surface of the leaf, making it easier to roll and have them tightly wrapped.

Cabbage is a staple #food in many countries of the world. Each region has their own dishes and preparations, some examples: the sarmale in Romania and dolmeye kalam in Iran (#cabbagerolls ), the krautsalat in Germany and coleslaw in US (#cabbagesalads ) and the Korean kimchi (#fermented with spices). The restaurant in the @fridheimar farm (see previous posts) has many #bumblebees buzzing around the greenhouse. No need to be scared: they are not aggressive and, as with almost any animal, it won't attack you if you don't provoke them ;) They're very busy doing what they do, #pollinating all the tomato plants.
