Haven't had much of an appetite for months. Not eating enough really takes its toll on my mental health. Anxiety creeps up over extended periods of insufficient calorie intake and tends to take over.
I definitely feel more balanced emotionally and hormonally and tend to feel generally better eating healthy #plantbased food. My problem is eating enough regularly.
So today I made myself this for dinner,which I couldn't even finish because if was so filling. (I'll definitely finish it later )
As soon as I started ingesting these plants I started feeling good.
What’s for dinner? Kale salad with ✨Citrus TAHINI dressing✨ by @dreenaburton and my favorite ✨Crispy Superfood Falafels✨ by @thefitforkfeed. Omg you guys this dressing is fantastic! If you know me, you know tahini and I aren’t exactly besties 😜 But this sweet fruity dressing is a game changer! I added apples, carrots and raisins to the kale and it’s perfect! Post-run lunch, playing “what can I make out of things found in my pantry” - baked potato with a mixture of diced tomatoes, chickpeas, peas, mushrooms, chopped walnuts seasoned with cumin, garlic, onion, oregano and the Braggs duo of nootch and liquid aminos. .
Late lunch? Early dinner? Doesn’t matter this tropical fruit salad in a papaya boat was just what I needed after a super heavy avocado filled breakfast. I usually eat very low fat but today I felt I needed more so I listened to my body and had potatoes, avocado, and fruit for breakfast. Kept me full most of the day. #vegan#wfpb#papaya#fruitsalad
Picked up some Mamey Sapote the other day. This fruit when it’s ripe is an orange-pinkish color inside and tastes like a really sweet, sweet potato. To make sure you pick a good one scratch near the stem. If it’s orange or pink underneath it’s a good one. If it’s green or gray, it was picked too early to properly ripen. When it’s soft and squishy it’s ripe and ready to eat! No recipe, prep or seasoning needed.

I meant to post this the night I ate it about a week ago but completely forgot!! Anyway it's up now 😅 but let me tell you how freakin amazing this was! My mom absolutely loves pad thai and so when caitlin posted this recipe I was so happy because I know pad thai is probably one of the hardest things my mom had to give up because she is trying super hard to be vegan! The only thing she eats now is honey, but when I made this I was really nervous because I wasn't sure if it was going to turn out good BUT omg it turned out SOOO GOOD! Just like the nonvegan kind and best of all my mom loved it! So even though this is late thank you SOOOOOO much @frommybowl for this delicious recipe! 💖 (11/10 recommend!!)
