Today marks Graziella DiFeo’s 23rd Anniversary as the owner of Graziella’s Restaurant in White Plains, NY. Before that, Gracie worked at/was partners at Casarella’s in West Harrison for 25 years! She has been an inspiration to so many, but none more than her family; her three children, Sandy, Josephine and Angelo, her husband Rocco and all her in laws, nieces, nephews and grandkids. Foodie Fridays – Simple Strawberry Chia Pudding!
End of March and Melbourne is still putting on plenty of warm and sunny days.
And local strawberries from Coldstream in the Yarra Valley are eating marvelously.
That’s why we’ve chosen something cool & refreshing for this week’s Foodie Fridays.
This Simple Strawberry Chia Pudding is easy to prepare…you just need a little patience to wait for it to set properly.
The longer you leave the pudding to set, the thicker (and we think tastier) it will become.
That’s why we like making it late at night and having it for brekkie or a brunch the next day.
We prepare individual serves in glasses or bowls… ready to serve as a brekkie, snack or desert.
We also keep some in jars. This way it lasts a couple of days longer and…
You can spoon out the pudding onto your oats, your cereals, serve with yoghurt & crushed nuts, or with have in a bowl with other seasonal fresh fruit.
Our top tip is avoid sweet garnishes and go for things that will balance out the sweetness, because it has plenty of sweetness already from the coconut milk & honey.
Mint, chopped nuts, coconut flakes all work well.
The ingredients are Strawberries 🍓 Coconut Milk, Honey, Vanilla Bean, Lime Zest
& Chia Seeds!!
