I had a big lunch today of a Nando’s Mediterranean salad and chicken with my keto friend so didn’t feel hungry enough to have any dinner. I could have fasted but had this spinach instead. 0.5g carb.
It’s amazing how much of your own fat you use for energy when you only eat when hungry and only eat the portions your body needs. The benefits are endless. 🌱🍃🌱🍃🌱 .

Dinner (or lunch) doesn’t have to be fancy or take a lot time. I was short on time yesterday so I literally put a whole bunch of things together and this was hubby’s dinner (I had the same minus the eggs and potatoes) He said it was absolutely delicious and totally satisfying. In a large bowl: roasted lemon broccoli, half an avocado with chili flakes, chopped cherry tomatoes, pickled shallots (marinade sliced shallots in mirin and rice wine vinegar) seasoned roasted potatoes wedges, couple of soft boiled eggs, marinated artichokes, a dollop of hummus (or any dip you like) all sitting on a bed of brown rice. If you have staples and a stocked fridge, meals like this come together in no time. Use any ingredients you like. I drizzled a little olive oil, lemon, Maldon salt and hot sauce and that was it! The perfect balance of color, raw and cooked veg, protein, fat and fiber! Almost zero cooking involved. Finally got to try @dickis.newfarm after it has been opened for a couple of weeks! It is a fully vegan 🌱cafe which is amazing and serves a range of items on their menu- which I absolutely love as it has such diverse options! This was their NURTURE BOWL, GRILLED CORNCAKES & CRISPY TOFU BAO !! Definitely would love to go back and try their other items 😆😆😆
