FOOD BLISS: Mondays deserve some bright citrusy minty sweet toast! To celebrate the start of spring this week, I’m sharing some of my fave toast recipes on the blog. Today I’ve got this Blackberry Ricotta Citrus Toast with juicy berries, sweet orange honey and bright mint and orange zest.

✨ What brightens up your Monday table this week?
I went to pick up oysters at the neighbourhood restaurant for my final dinner in Paris.
27 of the freshest oysters that are in season from all around France (I had 3 in my tummy while testing out what to buy) for €75 (SGD $121). The oysters would curl up around the edges when you squeezed the lemon on it. Nothing says FRESH like that. They were not only large but you could literally taste the sea with each oyster. The guy curated a platter of 7 varieties of oysters. Each had its own flavour and story. Was such a joy listening to him explain each one. He wasn't just an oyster shucker, he was a story teller. And the way he shucked and packed it made it look even more incredible. I feel so privileged to be able to have this during oyster season. .
Prawns, beancurds and Chinese leaves. 🦐
This was so flavourful 😋, the prawns were nice and moist, the beancurds soaked up all the flavour of the broth and the Chinese leaves had the right balance between crunchy and tender. The broth hit the spot being light, with a nice salty seafood flavour.

Frozen bananas 🍌🍌🍌 topped with almond butter, cacao butter and tahini then rolled in crushed nuts and seeds.

Profiteroles.. rellenos de Lemon Curd
Exquisitos. Pequeñas bombas de una masa tierna y ligera muy muy ligera, rellenas en este caso de esta crema que ya anteriormente me canse de alabar.
Pero es el turno de Pâte à Choux, o Pasta Choux. Una masa de origen francés o para algunos en realidad italiano llevado a Francia. Masa ideal para la preparación de lionesas, petit choux, éclairs y hasta buñuelos; pero en este caso serán profiteroles. Como dije antes, pequeñas bombitas, con la crema de nuestra elección. Para rellenar estos profiteroles les podemos hacer un leve corte para abrirlos sin despegar ambas mitades, o con un pico en una manga con la crema, pincharlos y por el pequeño agujero incorporar la crema, evitando que explote de la misma en nuestras manos claro.
📌Harina 120gr🔸huevos 4🔸manteca 100gr🔸azúcar 5 gr🔸agua 240 ml🔸sal una pizca.
📌Calentar el agua con la pizca de sal, azúcar y la manteca hasta que suelte el hervor. Incorporar la harina y mezclar rápidamente con cuchara de madera hasta que se forme una pasta. Retirar del fuego, integrar de a uno los huevos. Una vez creada la masa colocarla en una manga y armar los profiteroles en este caso. Horno 200 C° en placa sobre papel siliconado o papel manteca. Por dentro tendrán huecos con aire, serán esponjosos y no tanto por fuera. Perfectos para rellenar o comer asi como vienen del horno, aunque su sabor no es tan sabroso ya que apenas colocamos una pizca de azúcar o de sal. Lo importante de ellos es que saben contener bien su relleno.
Lo importante de ellos es que se dejan comer. No solo seducen con su apariencia de masa suave y ligera, sino que al ser casi huecos en su interior pueden contener lo que permita la imaginación. Volviéndolos letales en este caso con el lemoncurd. ♡

London food bucket list ✔️ scotch eggs! It’s a hard boiled egg surrounded by sausage and bread crumbs then deep fried. Fortnum & Mason claims to have invented it, but I was surprised by the Indian spices. And ‘scotch’ is not related to Scottish, but rather -scotched- which means something has been done to the egg. 🤷♀️
The fruits (and veggies!) of some foraging and some home gardening in #China ! In cities all over China organic and pesticide free food is becoming hard to come by...so foraging and gardening in the countryside is becoming more and more important. China being a huge country, the produce varies wildly from one end to the other, so friends and family often gift each other home town specialties. Leafy greens and roots I've never seen or tasted before, from Anhui, Hubei, all over Guangzhou...there was even a live free range chicken on the balcony! 🤣 #forage#Organic#CanIEatThat ?
