Raw Cookies & Cream Cups by @365cleaneats

1/2 cup (50g) Raw walnuts
2 pitted Medjool dates
1 tbsp raw cacao powder
1 tbsp raw cacao nib
1/8 tsp good quality natural salt
3/4 cup (150g) melted cacao butter
3/4 cup (90g) raw macadamia (soaked 2 hours and rinsed)
3-4 tbsp raw agave or maple syrup
1 tbsp unsweetened almond milk
1. In a food processor place every ingredient for the cookie and process until well processed but still slightly crumbly.
2. Roll the cookie mixture into small balls and scatter half of them into small silicone moulds or a lined baking tin.
3. Place every ingredient for the cream in a high-speed blender and process well until smooth. Add more sweetener if you need.
4. Pour the cream mixture over the balls and scatter rest of the balls on the top.
5. Put it in a freezer until sets. (About 1 hour)
Note: You don’t need to use all the cookie mixture. You can make bliss balls with the leftover.
Celebrated our anniversary this past weekend at @nixny -- a vegetarian resto w/ a Michelin star! Dinner was great (shared it in my story; I'll add it to my NYC highlights reel) BUT the best picture I snagged was of our dessert course: a vegan chocolate mousse cake with a heavenly passionfruit gelee paired w/ espresso. BUT FIRST! Let’s talk about this smoothie bowl 🤤 All the warm weather this week has me craving something cool, so I’ve been whipping up frozen concoctions. I blended together steamed then frozen zucchini, frozen banana, coconut oil, lemon juice, @feramoringa powder, ginger and water then added bee pollen on top. It seriously tastes like Lemon Sorbet! I scream, you scream, we all scream for NICESCREAM! A beautiful day calls for some smooth and delicious ice cream. The bottom layer is banana and the top is pineapple, topped it with some coconut flakes which reminded me of a pina colada 🍹. I’m not even kidding this was so delicious I could probably eat it every single day. 🌸✨🌈🌟⭐️💫
I've been experimenting with chocolate slice recipes lately. This chocolate raspberry slice isn't quite right yet but that didn't stop the girls and Luke from demolishing it ☺️....thinking I won't mention the extra large zucchini I put in it 🙊

Given the artic temps as of late, I would've been happy with anything above 40 degrees but this is just mother nature showing off. If this unpredictable weather has taught me anything it's to appreciate the present because ya never know when snow hiding around the bend. Which is why I’m taking full advantage of sunshine and declaring it offical ice cream weather.
@mikeanddaves was the obvious choice to celebrate this sunshine because it let's you indulge while staying on track. I couldn't be more proud of my friend @davidasser for creating one of the best guilt-free indulgences in the city. They offer a menu of pre-made combos or you can make your own choosing from a range of vegan or yogurt bases, including pb, cherry, banana, etc. and rotating seasonal flavors, so hurry up if yo want sum of dis pumpkin. The bases include that frozen ingredient and nothing else. The real fun starts when it comes to mix-ins, the whole menu is health-minded so don't be surprised to see things like protein powder, nuts & seeds, puffed quinoa as well as the fun (and healthified) stuff like paleo granola & cookies, vegan icing, and vegan nutella spread. The texture is not quite typical soft serve but more like a swirled smoothie and it certainly fills you up like one too. That all being said, I think this photo speaks for itself so get your ass down to the village and get your swirl on. #wellsideofthevillage

1 can full-fat coconut milk
3 Tbsp honey or maple syrup
1 tsp vanilla extract
2 tsp gelatin @vitalproteins
1 Tbsp water
Coconut oil to grease
1 cup of mixed berries
1 Tbsp honey or maple syrup
•Add water to small bowl and sprinkle the gelatin on top. Allow to bloom for 5 minutes. •Heat coconut milk, honey, vanilla small pot low heat. DD gelatin and wise together until gelatin fully dissolved and combined. •Pour panna cotta mixture into ramekins and refrigerator for 4 hours. •add berries and honey to small pot on medium low heat. Stir until berries start to breakdown. Cool in refrigerator. •combine the two and enjoy!! •

Rather, these breakfast (or snack) brownies (tastes like cake!) are made with:
Rolled Oats (or you can process it into a flour)!
Tiny bit of unsweetened applesauce!
Raw cacao, the original superfood!
Mini chocolate chips! .
...So shall I call these “Healthy Almond Butter Banana Bread Oat Brownies?” .
2 cups organic rolled oats
3 very ripe bananas
1/2 cup organic almond butter (peanut butter is okay too)
1/4 cup raw organic cacao powder (regular cocoa is okay too)
1/4 unsweetened organic applesauce
1/4 cup organic coconut sugar
2 tsp organic vanilla extract
1 tsp organic cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1/3 cup vegan dark chocolate chips
Pre Heat oven to 350 degrees.
Coat an 8x8 pan with coconut oil, which allows parchment paper to stick. Cut to fit parchment paper on pan the best you can and cover pan with it.
Combine all the ingredients in a bowl for the brownies except the chocolate chips. (Use a food processor and blend well for more dense brownie, which is what I did.)
Add the chocolate chips.
Pour the batter into the pan.
Garnish with drizzling almond butter glaze or a few chocolate chips on top.
Bake for 30 minutes.
Remove brownies and cool.
Monday vibes ✨ Made tea-time a little extra special today with a paleo flourless chocolate cake 😍 Not gonna lie I’ve been feeling a little out of sorts lately recovering from a pesky cold and *winter* so I had a real case of the Monday blues earlier. I taught a yoga class this morning which perked me up a tad as usual, but just felt super drained after. And then I saw the words ‘chocolate cake’ on a post and i was like DUH chocolate cake solves (nearly) everything. So I got busy baking this paleo, gluten-free, dairy-free, refined sugar-free flourless chocolate cake and YUP miraculously my problems have been solved 😎 But for real getting creative in the kitchen got me back into motion - back into focus and ‘doing’ mode, part of the reason I love baking and creating.
