My relationship with #beets were from a can. My parents used to stock dozens and dozens of canned goods and me and my siblings would go through them and have fun opening them and tasting the “weird ones” and beets was on that list!
Until I went to my inlaws for #Pesach a few years ago and I watched my mother n law prepare beets fresh! Really mom?! I asked her. Beets?? Isn’t one of those #canned veggies that remain canned veggies?! Oh no! She said! Prepare right beets are such a #delicacy . And how right she was! I now serve it often at my shabbos table. And now certainly for Pesach!! •
4 fresh beets (❗️you can cheat and get the prepared ones from @gefen_foods they’re equally delicious to the fresh ones)
1 large good quality tomato
Coarse sea salt
4 cloves garlic chopped
Handful Chopped nuts (I used walnuts) ➡️to make the beets: wrap each beet in a silver foil and place on a cookie sheet and bake 350° for about an hour ❗️they will leak as they cook. You must place in a pan or they will drip all over the oven ➡️take them out and let them cool. Run them under water and the peel with your hands. The peel should come right off. ➡️slice the beets and tomatoes into thin circles and place on a dish and sprinkle with salt and pepper and garlic ❄️does not freeze well

I've been into eating beets lately. I like the yellow ones. The reds ones cause EVERYTHING to turn red. I have beets raw in my superfood shake or I add them cooked to my stir fries. Beets have a TON of health benefits. How do you like your beets, or do you hate them like my kids and hubby? I get it. They can have a strong earthy sweet like flavor.

Roast chopped turnips in the oven until soft and toasty. Chop steamed or roasted beets to match. (Equal parts) drizzle a teeny tiny amount of balsamic vinegar and a good amount if olive oil. Sprinkle some Himalayan salt over the top and some fresh parsley. Enjoy!
