Take our beef for example, our aim has always been the traceability and sustainability of what we source. We use a handful of farmers from the Hunter region as no one farm could possibly keep up with a shops need. Each week we are provided with the decleration and waybill sheets from the abbotoir knowing which farm it came from that week. We have direct relationships with these guys who raise their cattle naturally on grass from start to finish so that we know we are only getting the best.
We salt age it fresh, cut from the carcus, and make the patties in house. We have control over the entire process of the production right up until it hits your lips!
